I'm looking at buying a 2007 FZ-1 with 100 miles on it. How do you recommend I treat it at the start ... it obviously hasn't gone through break in yet.

Treat it like it has no miles and break in as the manual suggests. If you did not get a manual I would spend the cash and buy one, it's not the most comprehensive one that I have seen but worth having for the most important info. I will add what the manual says for break in when I get home tonight.
If I recall correctly it says to not exceed 6000 rpm for the first 1000 miles. And of course vary your rpm during break-in even when doing a constant speed.
You can register on the Yamaha site and download a copy of the manual. The manual is adobe locked against printing it but a quick google search fixes that annoyance.
