Engine choking at 5k rpm

So, my 06 FZ1 is choking at around 5k RPM...

At the begin, I thought it was an electric issue, I then moved to look for a fuel problem, now I believe that something is wrong with the temperature .........
The bike runs smooth until: The engine is fully warmed up and at around 5k RPM... It feels like a missing fire, but it can also be a missing "something" in the injection system.. I noticed that the temperature vary a lot and I was wondering if that could cause the problem by sending "wrong information to the ECU"..

This is what I did so far:
1) New sparks
2) Tested coils
3) Fuel line mod
4) New fuel pump
5) Cleaned the inside fuel filter
6) New thermostat
7) New coolant
8) The diagnostic test show everything is good

I haven't cleaned/tested the injectors yet, but while I was researching around, I read somewhere that the air temperature sensor may give problems...

What would you try next?
a) Replace the water temperature sensor
b) Replace the air temperature sensor
c) Pull out the injectors and clean/test them
d) Try something else

This is going to sound odd, but what brand of Gasoline are you using?

I was having stalling and cutting out issues on two very different bikes, my 2003 FZ1 (Carbs) and my 2007 V-Star (EFI)

I was using Costco Gas, switched to Chevron (87 octane) and the issues all went away.
