No idea how to adjust that one, sorry. But, is it really off? Reason i ask is the air temp is taken inside the airbox and for my bike, runs 5-7℃ above real ambient temps in summer and 2-5 above in winter.

How about just swapping the speedometer intetnals? The odometer total is stored in the speedometer unit not ECU. I have 2 speedometers and have swapped them back and forth a couple of times. One of the speedometers has a cracked case so I only swap the internal board.
