The water Pump Seal and Impeller needed to be replaced a while back - I had the shop do that. I fixed a seal in the thermostat housing myself and had 2 shims put into the motor around 66k when I heard a slight ticking sound. mostly just fluids and tires.
Still better than here in the US.
You can get your M1 License at age 17 or 18 and walk into a moto shop and walk out with any motorcycle you can put a down payment on....

Is England like Australia where you are required to start with a small displacement bike and ride that for a year before moving to larger displacement?
You might have a leaking head gasket if the coolant in the radiator is milky....
The weephole issue as mentioned means the seals on the water pump need to be replaced.
I am at a loss.....
Let us know if the new fuel cap fixes it, maybe the leak in the caps is causing some pressure that forces extra fluid into the lines???
Sounds like you were just working the motor hard and then came to a stop and the fans just do not move as much as as a bike in motion does, so the temp climbed up until you started moving again and the coolant was able to come down a few degrees.

If your bike is moving at normal speeds the engine should stay cool. The only time I had my warning light come on is when I stopped on a warmish day and left the motor running while I read something on my phone. I was in place without moving for 5 min or so and...
The popping during decel is normal.
I have never taken my Carbs off the bike since I owned it, but I will run carb/injector cleaner through the system every few months to help with Ethanol gunk buildup.
For reference I bought my Bike with 37k on the clock and it is just shy of 130k right now...
