I've already purchased a used R1 damper and a fork clamp, so looking for guidance with the plate & fitting.

and the main reason for the adjustment is that the R1 forks are 1/2 an inch shorter than the FZ1, so the original balance of the FZ1 has now changed.
Someone who knows bike ergonomics better than me will hopefully chime in why.

If you read through the entire thread though, it does advise that you need an aftermarket or rear shock conversion that is adjustable, as you'll need to lift the rear to compensate for the front drop with the shorter R1 forks.
My understanding is that Ivan's flash doesn't alter fuel mapping, as he recommends a PC3/5 for that. That's what it was when I did mine years ago. Someone chime in if this is no longer the case.
This allows you to load different fuel maps depending on what mods you have.
Or...you could just buy a replacement gasket, which was AU$2 here, and see if you actually need to outlay any money. A previous owner may have already competed this upgrade.
If, once you open it up, it still needs the upgrade, you put your bike back together and plan for the expense.

Question for my Australian brethren...is the R1 front fork conversion, calipers & brakes worth the effort now?

I had a quick search for 50mm R1 forks and either I'm not looking in the right place or they are...
Did you clear the 11 engine fault code - section 8-42 of the service manual? Unless you clear it, it will prevent a start, regardless of any changes you have made.
